Remember that headline you read forever ago that said "Nitrates/Nitrites are bad, so bacon is bad", and ever since you just assumed bacon must be bad for you?

There's substantially more nitrates/nitrites in vegetables like celery. It's a useless health marker.

Sodium nitrite? Heavily used in my country by lazy butchers as a ‘fast salt’ and shitcoin cooked ham making ingredient. Highest rates of colorectal cancer in the world. No thanks.
