I can't add cheese to the classic, however, we do these kinds of sandwiches with cheddar (yum) and a good ripe (not hard) avocado.

Put a soft egg on there too, super messy, you can't even cut these.

By the way, my wife/daughter laugh at me, I love the 'plastic basket' dinners (I do them a lot), with a sheet of aluminum foil or the red checkered pre-square paper.
