I like the possibility of digging deeper in to a specific subject or group topic, but still having the general townsqure of my feed, and most importantly not having some opinionated admin control my entire social graph

A ditto admin can control your feed though because they can have policies that reject porn, spam, users, etc

of course, but then I can take my follows and say GFY admin, I'm gonna start my own shit and we part ways right?

I actually never went down the mastadon route, but my understanding is that the admin could just say - we don't like your opinion bye bye - and you'd lose essentially your social graph on that server. Is that right?

You are correct on both statements. Only problem is that Syncing data TO/FROM ditto don't seem to work at all right now
