When will we see electric vehicles (or just newer vehicles based around computer systems) with aftermarket firmware/operating systems that strip all the spyware out? Like a Graphene or Calyx for your vehicle.

I think the all-electric Lightning is actually kinda cool but I don't want to drive around something that is constantly reporting my driving patterns back to an AI and predicting my movements. I want full control. I want to be able to toggle lidar cruise control and collision avoidance and lane assist on or off as I please. If I want to tweak the sensitivity of the accelerator to the motors I should be able to do that. If I want that big ugly iPad on the console to pull down the blockstream sat node data over XM or something I should be free to do that.

I don't think so. It would first have to be illegal not to have self driving cars. Once the manufacturer's warranty is done there's basically nothing stopping hackers from doing it. It's like the iPhone and jailbreaking.
