Fold really needs this convert-at-last-second feature on their debit card.... So annoying having to sell in advance and then hope the tx settles before its my turn to pay

Exactly. If it's not selling on the spot instantly, then it's simply a glorified fiat card that lets you sell Bitcoin into it.
