A simple yet delicately flavored Pan-fried Crappie with a Seasonal Vegetable Medley. I like to go fishing early Saturday morning and then stop at the local farmers market to grab the rest of the ingredients. 👉🏻 Don’t go to Walmart 👈🏻

Ingredients:

- 4 fresh Crappie fillets

- Flour for dusting

- Salt and freshly cracked black pepper

- 3 tablespoons local olive oil

- 2 cloves garlic, crushed

- Fresh seasonal herbs: thyme, parsley or dill

- 1 Lemon for zest and juice

- Assorted seasonal vegetables: Bell Peppers, Zucchini, Baby Carrots, and Fresh Peas

Instructions:

1. Clean and pat dry your Crappie fillets. Season them with salt and pepper, dust lightly with flour.

2. Heat two tablespoons of olive oil on a pan over medium heat. Add the fillets skin-side-down and let them sear until a golden crust forms, about 3-4 minutes.

3. Flip your fillets and add crushed garlic and chopped fresh herbs to the pan. Baste your fish with the infused oil, cook for another few minutes until the fillets are white and flaky, but still moist.

4. Remove your fillets and set them aside, tented with foil to keep warm.

5. In the same pan, add an additional tablespoon of oil if necessary, sauté your sliced seasonal veggies until just tender. Season with salt, pepper, and lemon zest.

6. Arrange the fish and vegetables on a plate, finish with a squeeze of fresh lemon juice.
