They have their own repositories, like in GNU/Linux

That means very little to me 😬 I truly am a pleb when it comes to tech. Will apps automatically update or so I need to go in and manually update the apps I wish to?

It's been a while since I've used F-Droid but I think you just go in and update them... not a whole lot different but maybe a little less automated. Then again it's been a little while.
