Hey #asknoster , do you have experience cooking, eating Jerusalem Artichoke? I think there are some at the farthest back part of my property. Likely planted by the previous owner. I know I should wait till after frost to harvest. I read that winter savory herb will help with the gassy properties. Other than that I have no clue. Would love your wisdom.

A friend gave me a bunch once. I had to use a potato peeler to get the skin/husk off, and it was hella hard, since they are so knobby. But they were delicious after boiling in some sea salted water. Didn’t add any herb but it should be great. We do clarified butter, pepper.
