As a kid, my grandma would always find whatever was in season - and we would eat just that thing โ€” unaltered with the exception of an occasional pinch of salt.

- tomatoes

- melons

- corn

- grapefruit

- strawberries

- etc.

Farmer friends would bring stuff to her house or we visited a market.

These were always eaten at a cutting board with our hands. When I was too small to reach she would set me on the counter.

I am not a chef because I come from a place of elaborate food preparations.

I am a chef because I come from people that enjoy good things together.

This is what what the Beefsteak is designed to be.

A surprising (or unsurprising, really) number of chefs and foodies grew up with similar experiences. My grandparents were the same, all summer we ate what came from the garden or stopped on the side of the road to buy fruit and veg directly from the farmer.

Living in Italy only reinforces how important good food and good ingredients are. The best dishes are almost always the simplest.

my grandmother always put sugar on strawberries and blueberries. i would nope out of that one. they were already sweet enough!
