Looks like you fill your tamales with pork, the way they should be. It irks me when people use ground beef in their "tamales".

Yeah, I’m kind of a purist that way. I’ve never make tamales with anything other than pork but I often think about smoked brisket. One of these days.

Now brisket would be good!
