On one hand they'll say "Sheikah technology disappeared and no one thought to research the matter further", meanwhile you run into many archæologists obsessed with the Zonai, Gerudo and Goron lore. And the Sheikah are helping research the ring ruins and not a single albino Jap mentions their ancestors or the machines they built.
