Yeah. Soft water kinda sucks for just about everything. Lake water still contains minerals that give it body & texture. The minerals provide structure, giving the compounds & flavonoids in coffee something to bind to in the water.☕️

In my day job, I work with breweries. Most of them use R/O to strip the water down completely, then add back a specific mineral profile as the foundation for their beer. ☕️
