Tonight's Menu: Oden (ใใงใ)
fish cakes, boiled egg, shiitake mushrooms, enoki mushrooms, spring onion, various broth ingredients, etc.
I don't know whether to call this winter rain or spring rain..โ๏ธ
Either way, oden is perfect for a rainy weekend evening.
I always used to simmer dried anchovies/sardines/shrimps, white radish and so on for a long time to make broth.
But dried anchovies for broth are ridiculously expensive these days.๐ฎโ๐จ
So I simply used fish sauce, soy sauce, outer onion skins (I don't eat) and shiitake mushroom stems to make it simple. Yet, it lacks depth.๐
