Spent a few years on GrapheneOS. Love the ethos and all that, but eventually went back to Apple. I have kids and a garden and wife and a job etc. I need my stuff to just work.

GrapheneOS expects a bit more work from the user but I def prefer the privacy benefits.
But I know what you mean, iOS is just more polished, responsive and useful for normal daily usage.
