Is a notebook and a pen is way better than an iPad and an Apple Pencil or am I just too old?

kinda, handwriting tires me way more than a keyboard ever will + it is way more legible and easier to edit
True.. I do like to write notes on paper but I can admit, even my handwriting has gotten really illegible.
i translate my immediate thoughts the best through speaking, then comes handwriting, typing on a phone comes after that, and then comes a physical keyboard š
