Even in Graphene, if you install one app that has a tracker in it Google can track you, most people have several, also every phone reports your location to cell towers as well and chat logs.

See, the point is that Google is a data company making their revenue on data. Apple is not (yet). Motivations are different, so among two evils I trust the fruit company more.

I would also say I trust apple a bit more with privacy, just can't do the proprietary shit. Like to be able to use custom launchers and app stores.

That’s fine by me, less risk surface for the normal non-tech crowd. I wouldn’t trust my family to know bad actor from a good one, hence a wall garden works for me to protect them
