I totally enjoyed that recipe for yearrrrrrs . It's still delcicious, but don't think I've eaten chicken in a few years now, although eggs on the regular.
Check this out: (here's one that is good too from my mental recipe book)
add a few strands of saffron, to the cheese and melt the cheese on LOW heat, with a little bit of butter, stirring it as you go, butter one side of the tortilla... low heat again
add the cheese and spread with a butter knife over tortilla, (while not in the pan, its too hard that way)
add black olives, jalapenos, and a little bit of dill, (mince dill between fingers to dust then sprinkle and toss about),, a tiny bit of black pepper, a dash of sea salt, and a fresh squeezed lime with some chopped cilantro...
mmmm... :D
