Chicken marinade:

I made this up years ago. I call it Asian Black Marinade (or sauce when thickened) on account of the fungus and bean sauce even though it's very red. Notice no acid, so it can go long. I'll squeeze a lime in around lunch time.

1/3 c Liquid Amino

2 tbs Black bean chili sauce

2 tbs Red miso paste

1 tbs Mirin

2 tbs Sesame oil

1 tsp Fish sauce

1 cl Minced garlic

1 Star Anise

1-2 Black Fungus

1 tsp Chinese five spice

1 tsp Crushed red pepper

1/8 c Water
