Why are all NUCs limited to 16GB of RAM except Lenovo?

You really need 32GB RAM for a good Bitcoin node these days.

I have a 4GB RPi and it's struggling.

Going to buy the Umbrel home appliance, but it only has 16GB of RAM, but I can't be bothered to manually configure a machine myself again. I did that for my Start9 node.
