Apply low heat. Do not use seed oils. Butter is great for cooking plantains. Enjoy.

Recently found out about tallow from Bitcoiners. How would that do for plantains?
Tallow is great. Rendering tallow is an experience.
Have you tried to sear steak with ghee? I kinda like it.

Try it lol. I don’t know if you will like the smell but I like it. It comes in different forms. They usually looks like half melted butter, a little mushy looks like apple sauce. Some are a little thicker and closer to solid. Tibetan, Indian and Mongolian use it with their food and tea.
Gonna look into this now.
