I think you need the right hardware. Got a shitty stove unfortunately. Much better with BBQ. But BBQ is always pain to clean afterwards lol.

You can make a delicious steak in a pan. Go for a stainless steel or cast iron pan properly seasoned. Let it get to a high enough temp. Sear the meat on all sides. The sear is done when it releases. So jiggle the meat if it doesn’t want to move it’s still searing. When it’s done it will just slide. If it’s a thick steak or you don’t like it rare finish it off in the oven. Or switch to burner on low and butter baste it with herbs.

One problem is I am a dude. Too much effort.

Here is what I do:

1) I throw steak on pan turn a few times.

2) Get knife to cut to see if it’s medium rare to medium.

3) Then I eat.

Get a few fucks to give. Effort is sexy.

Sometimes keeping it simple is the best approach. Dont ruin something that already works is my philosophy.

Twice is fine. And you can use a pan on the grill too
