Also, just made mayonnaise myself first time today. Just put an egg, 1-1,5 dl olive oil, a cork of white vinegar, a pinch of salt. Then use with handmixer. It should become sticky enough to turn up-side-down. Illogically, if it doesn’t, more oil makes it firmer. Weird… but works. Then add some lemon for fishy stuff, some chipotle paste? Or you can make bearnaise sauce by replacing olive oil with melted butter and some dragon. 😁 Won’t taste exactly same, but it is tasty and it’s A LOT cheaper and healthier than store bought poison. Takes 3 minutes…
