The process is definitely radically different from a propane grill. It requires ash cleaning every 3 to 5 cooks or so if you want to maintain nice airflow that allows temperature to rise quickly after lighting your lumps. In my experience it takes around 20min to get up to 500-550 degrees.

If you have a big family, my advice would be to get a large to an extra large. Can’t beat the flavor. It’s far, far better than any charcoal grill 🀌🏼🀌🏼🀌🏼

Thanks for the advice! It's definitely on the short list now. Sounds like cook times are a bit longer but the 🀌🏽flavooooooor🀌🏽 is the #1 priority!
