If you're receiving an on-chain bitcoin payment, how many confirmations do you need to wait in order to have 99% certainty that the dominant mining pool won't reorganize the blockchain and double spend it?

Depends on the amount being sent for larger amounts. Probably something like six, but generally three is enough.

3. Assuming they will deliberately target your transaction, somewhere between 3-6, would have to do the calculation.
