Better flavour is the only difference.
Boiling shit in oil is not actually healthy, it doesn't matter what kind of oil you use, it's the heating of the oil that makes it unhealthy.
Both seed oils and beef tallow are already cooked before you use them so they are both already unhealthy.
The only "healthy" oils are raw oils like butter or cold pressed olive oil etc.
Being from plant or animal does not matter, it's the process to extract and concentrate the oils that actually matters.
More heat = more oxidised
