I almost never buy t-bones because the different muscles require such different cooking times. But the deal on these was too good to pass up.

When get them, I ALWAYS pull the tenderloin and cook it separately.

here is a free chef tip: put salt on them both sides, then in the fridge for 1-2 days better 2 days max 3 days. you will not go back to any other method other than sous vide
