Being anonymous and using encryption gets you a lot of the way to privacy. Tor is an added bonus. VPNs are a must.

In what way should I be using encryption? That is definitely an area where I need to improve.

You already do, for the most part. When you use HTTPS or WSS (on your Nostr relays) that last S stands for Secure. So your data is all encrypted.
