Tried a new technique…the steak was from K&C Cattle in Texas, bought with BTC via Oshi and shipped frozen. I kept frozen and seared/seasoned both sides over high heat for 5-7 min each side to get a nice char, then cooked indirect until ~120°F.

Was delicious.
