This is a cool post I am in the industry and say use only butter not margarine when I order the back of house looks at me crazy lol I don't think they will ever move away from cheap ingredients tbh...u have liabilities that r dying away the longer u don't sell the food might as well buy it cheap incase u have to scrap it or fuck ups...the industry is already hard enough with 80% I wanna say failure rate in the first year the ones that do sell better food close often due to high prices from what I've seen unless they have a nice atmosphere or some staple on their menu

Restaurants are basically an end game fiat establishment at this point.
Very thin margins tbh blows my mind the amount of people that go out and eat everyday there was one time our POS went down. Cards could not be processed for a couple days so we'd swipe it there n they move on. So when we got to charging them 4 days later, all the cards bounce, proving most people out there live paycheck to paycheck. My boss was losing his mind with all the bounced checks. And angry customers complaining or having negative balances because of us just was wild to see
