We have no visibility into the destination of LN payments you make, but if you close a channel with us it’s easy to follow those funds on-chain.
You couldn't track other ways of converting LN to on chain, but the whoever grants you the UTXO could always track the UTXO.

Depends who you trust. Maybe spreading it around to loop, boltz, and p2p is best. At least p2p reduces the honeypot risk of a centralized service like loop or boltz.
