Because infrastructure isn’t free. You pay for your phone and internet access. You pay for your electricity and heat. You pay for entertainment. Nostr relays are run for the benefit of the users, and they have overhead costs that are not subsidized by advertising. People who want the best experience should help cover the costs so they can continue to operate and provide a service.
