Buffalo beef from the farmer’s market this morning. I haven’t tried buffalo before, does anyone know how it tastes compared to cow?

I do Buffalo burgers here and there. Pretty similar in burger form. Maybe a little less fat but for the most part spot on.

Keep in mind I love liver and organs so my Overton window is well passed traditional. 😀

Just did some heart burgers and tongue burgers. Down to the end of the cow so I did 1/3 organ meat, 1/3 least desirable beef cuts, and 1/3 fat. Safeway sold me a 14 lb bag for $7. This was my first time eating those organs. I’m a new fan. Still have difficulty with liver.

Cook bacon, take bacon off pan, cook liver in bacon grease.

Add onions… add bacon back. Serve.

Liver, onions and bacon. 🤌🏻

I’ve never been a fan of organs but maybe that is just the way they have been cooked when I have tried them. I think I could probably eat them mixed in a burger!

Bison is fairly similar to beef, especially grass fed beef. It may be earthier/richer in flavour and leaner in fat. Enjoy!

Been a long time since I tried buffalo, don’t remember it being much different to beef though.

Have you found tallow at your farmers market?

I don’t think I’ve seen tallow at the farmer’s market but may be able to get it at the Adelaide Central Markets.
