jb55's note got me thinking, what are some other under-appreciated veggies? I'm a huge cauliflower respecter, can't get enough of these delicious mfs. They're even good raw.

Cauliflower baked in a dutch oven, then drizzled with butter is amazing 💜✨

It may be an unpopular opinion, but I like cauliflower dipped in peanut butter as well.
