Topped with potato salad. I'm interested. I didn't see that coming.
It is a very Cajun thing that you will find near Lafayette. Paul Prudhomme did it too. It sounds like a weird combo and it is, but it is so so good. The creaminess of the potato salad with the spiciness of the gumbo 🤌
At the fire station, they tried half rice half potato salad on the first bowl, and everyone was a potato salad convert 💯 by the second bowl lol
