Tallow
Tallow works too. I prefer lard with the pork panko though. Better flavor symbiosis, imo.

Oh def see the logic. I just have a lot of tallow so I use it all the time. I have nothing against lard. Thats always a welcome component too.
Can’t go wrong either way.
