I used to use spreadsheets and online services (yeah, dumb). I currently use a combination of manual grid on a glassboard, and gnucash for budgeting. i dont do any projections beyond a month out but always have up to a year of major line items visible to see expectations from seasonal (weather, holidays, trips) events

A glassboard is my poor mans version of a whiteboard, but i use permanent markers instead of ones for a whiteboard. buy a large piece of glass and an opaque light backer and mount to wall. use permanent markers to write, and clean with common cleaners. With the money saved on not having to buy a whiteboard, special markers, erasers and cleanera, you stack sats.

GnuCash is FOSS accounting software for Linux, Mac and Windows. Great for small business, and likely overkill for home budgets and tracking but good training and reports if you go that route. I used to use Microsoft Money years ago so Ive always wanted to track the details.
