How does it compare to something like cashu? I think its possible for an ecash mint to be multisig like liquid.

That's what fedimint is doing and it's great and the biggest upcoming thing IMO. But nothing on mainnet/production ready yet. Cashu itself is also not ready to reliably store bigger sums, while liquid is. Liquid us like cheap onchain bitcoin with better privacy and worse censorship resistance/safety.
