Pre heat oven to 375
Cream:
1/2 cup butter
Add gradually and beat until creamy:
1/2 cup brown sugar
1/2 cup white sugar
(I use homemade vanilla sugar)
Beat in:
1 egg
1 cup peanut butter
1/2 teaspoon vanilla
(I use homemade vanilla paste)
Sift and stir in:
1 cup plus 2 tablespoons sifted all-purpose flour (you may need to a little more if your peanut butter is really oily)
1/2 teaspoon salt
1/2 teaspoon baking soda
Stir in:
1/2 cup semi sweet chocolate chips
Roll the dough into small balls. Place them on a greased cookie sheet. Press flat with a fork. Bake for 10 to 12 minutes.
