For anyone who is curious about the jargon of NOSTR.

A "DVM" is a "Data Vending Machine". It is defined in NIP-90 (linked at the bottom)

It essentially allows a marketplace for data processing to built on NOSTR. The types of services that can be built could be anything: Search, Generative AI, and more.

Examples of services that are or will be "DVMs":

How do I stop a dvm from using my data?

That is a good question. I'm not 100% sure about this. But I don't believe this is how DVMs work. A DVM only uses your data when you give it some as an input.

Additionally, NOSTR is a public protocol, so there is little you can do to stop what you post on here getting consumed by these services. Besides not using NOSTR.

I would go talk to the developers of DVMs to get the specifics of how they use data.
