But I'm searching for a protocol to sync (only most used data) to my 1,5TB online server. Then I want the not so often used files on a HDD somewhere else (over 8TB). Do you know an alternative instead of IPFS for that? :)

It sounds like you need some kind of syncing service, where you can modify over time which parts you want to sync. Have you tried resilio or syncthing before?
