Cutting up some winter squash this morning. Making pies... this squash is far better than any pumpkin for making pies. I have been keeping track of the brix levels of most of my garden produce. This squash is at 17%. Not bad. Brix is a measurement of dissolved solids albeit mostly sugars. The higher the brix, the higher the flavour.
