The airgap is important because you don't know for 100% certainty what might be transferred from hardware device to a networked computer (or vice versa) without your knowledge. The hardware device holds your keys. Why directly connect that to the internet when you don't need to?

couldnt that same attack be transferred onto the SD card that you are then inserting into your cold card?
Excellent question. In my thinking, you can look at the contents of the files on the card before putting into your coldcard. And also before you put back into your computer. The main attack I think you'd want to guard against is having your private key(s) transferred to your networked computer.
