I wasn't even aware there were different versions. Is there one to definitely watch/avoid?

Both have their merits .. the director's cut has extended scenes, but takes out the voice over from the beginning (which I quite like) .. the theatrical version seems to flow better and has *slightly* more colour grading .. 🤷🏻 .. both are still great 👍🏼
