Are there any stats on the breakdown of what clients nostr users are using? Is it even possible to get these stats?

That would be interesting to know.
On nostrapps the most clicked clients are Damus, amethyst and snort. Doesn’t tell me much but I’m sharing it anyway.
Some clients set client tags. I think Gossip is one of them. You can get the usage stats of those.
There are probably some ways you could make rough estimates for some of the major clients, but there isn’t really any way to know for sure unless the client included specific metadata - some do, some don’t
