Most probably due to Maillard reaction - the chemical process causing the proteins and sugars in the food to turn brown, creating hundreds of flavor compounds, making them tastier. This chemical reaction happens between 300° and 350°. My microwave needs to pre-heat if I have to put it on "grill" - for the same reason
