I’m all in with the Apple ecosystem too. Simple and gets the job done, although I wish Notes app supported markdown.
I’ve been playing with alternatives though. Joplin and Standard Notes both seem like awesome open source/secure options

Problem is I don’t have a Mac, I’m on Linux 😕 works well while on my iPhone but there are times I want to access it on my desktop.
Been eyeing Obsidian.
