I would also like to be able to turn the exchange rates off so I could calculate a stack by a theoretical dollar value as opposed to the actual current dollar value.
Why don't you just multiply the stack number by the theoretical dollar amount in a normal calculator?

Your stack is .34589976, you want to know how much it's worth at $100,000.00. You do .34589976 × 100000 = $34,589.98.
