Yuzu ichandrin (Citrus junos Tanaka) ripening as fall winds down. They are traditionally added to the bath on the winter solstice in Japan. Yuzu is a supposed hybrid of satsuma mandarin and ichang papeda, a cold hardy citrus from China. They arenโ€™t very juicy, but the thick rind is amazingly aromatic and flavorful. Oil from the peel contains limonene (~80% of volatile components) as well as moderate amounts of pinene, myrcene, terpinene, and a host of other aromatic chemicals.
