I think glyphosate plays a big role here. I think this is where most problems with wheat come from.

If we went back to old varieties of wheat and dried them naturally, I think there would not be so much gluten intolerance.

Interesting papers around on glyphosate killing gut bacteria. Obvious really! I think more celiac since circa 2010 when discovery made that glyphosate use close to harvest puts plants in shock and creates bigger harvest. So fiat
