Any stablecoin that is pegged to gold, silver, or both would be my choice, since it would not experience the same problems as a stablecoin backed by fiat, such as an infinite supply leading to mass inflation. There would also be greater trust and transparency as each unit would need verification that it is backed by actual precious metals.
